I worked a much less stressful restaurant a long time ago as a kind of combo line/sous/prep guy but the fundamental challenge of having to work to whatever happens—however many people come in, what you have to do if there’s less of something than you thought, etc. is both incredibly interesting and something I ultimately decided I absolutely did not want to be doing my whole life. Loved it, didn’t want it.
